Fruit Preservation by Bio-Product from Attar of Crocus

05 October 2011 | 04:28:00 PM

A group of researchers from Institute of Bio-technology has recently produced a bio-product for preservation of fruits with attar of crocus as the main component.

"Attar of crocus is known in the world as a substance with many uses, especially its capability of inhibiting and destroying microorganisms, mould fungi, etc. Therefore, the research group has used it to produce a bio-product for preservation of fruits,” Dr.  Nguyen Thi Kim Cuc, the group’s leader said.

Beside the main component of attar of crocus, the researchers have added some additives including membrane creating substances (mainly chitosan), softening additives, and additives for maintaining the fruit skin color and prevention evaporation of water from fruits during storage. These additives have also sterilizing effect and are fully natural so that are nontoxic and very safe.

Pilot using of the product at Hanoi Agricultural University, Nha Ho Cotton and Agricultural Development Research Institute (Ninh Thuan Province) as well as in many peasant households in Huong Khe District (Ha Tinh Province) get a high preservative effect. The fruits sprayed with this product had a loss ratio less than 12% and remained fresh for 30 days, i.e. 2-3 times longer in comparison with a control samples.

Five hundreds liters of this fruit preservation bio-products have been produced by Institute of Bio-Technology to serve the research at the laboratory and application models. The researchers are continuing in study to improve the product so that the preservation time will be longer and the product can be used for different kind of fruits before commercializing and introducing widely to the market to serve the need of consumers.
